Mortadella is a large Italian sausage or luncheon meat (salume) made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat (principally the hard fat from the neck of the pig).

It is traditionally flavoured with black pepper grains and PISTACHIOS.

The best-known version of mortadella is Mortadella Bologna IGP.


Mortadella boasts a centuries-old history, its name dates back to Roman times and is the best known cooked salami of the Bolognese tradition, with historical origins dating back to the 10th and 6th century.

Over the centuries, the recipe has changed: it is obtained from a mixture of pork, lard of diced pork fat (throat for the finest products), salt and whole or ground pepper.

The whole is very finely shredded, stuffed into natural or synthetic casings and follows a prolonged cooking that enhances aromas and flavors. The flavor is unique: delicate, unsalted.
