SOPPRESSA VENETA ALL'AGLIO - VENETIAN SOPPRESSA SALAMI WITH GARLIC

 

Typical Venetian recipe for this coarse-grained salami with a distinct taste, featuring a strong garlic flavouring. It is prepared following the traditional Venetian recipe.

 

Sopressa is a typical salami of the Venetian culinary tradition.
The processing to obtain this product is divided into 6 phases and each of these is essential in order to obtain the characteristic taste of this salami: cutting and deboning, grinding, stuffing, tying, drying and finally seasoning.

 

The Sopressa is characterized by a good balance between lean and fat parts, by a soft dough thanks to the cold grinding of the meat (with a grain between 6 and 7mm) and by a seasoning that varies from a minimum of 2 months up to over. 6 months which depends on the size of the product.

 

The Sopressa is obtained using the best pork meat: shoulder, coppa, loin (or loin), pancetta, throat fat and leg.

The leg (which, as is well known, is usually destined for the production of ham) gives an important note of value and quality to the product. This mixture of minced meats is then mixed with salt, pepper and a mix of various spices (called consa).
 

A gluten-free product, without lactose and milk proteins.

 

Available in a vacuum packed.
