STRACCHINO BERGAMASCO SOFT CHEESE - SERGIO ARRIGONI - 250Gr

Stracchino is a soft cheese made from cow's milk.

This is the popular version from Bergamo.

It has no rind and a very soft, creamy texture, and normally a mild and delicate flavor.

It is normally square in shape.

 

The name of the cheese derives from the Lombard adjective "stracche" , meaning "tired".

The old-fashioned Stracchino is linked to the Bergamo area for the history of its birth.

Upon returning from the pastures, when the cows were tired from the fatigue of transhumance, they produced poor milk.

The cheese produced with this milk, coming from "stracche" cows ("tired" in dialect), was called Stracchino, in dialect Strachì.

Transhumance also affected another peculiarity of this cheese.

Being produced during the transfer of the herd, there were not many comforts, often there were no dairies, but the milk was processed outdoors, for which Stracchino was produced with raw milk, without heating it, but with the heat of milking.

As soon as it was milked, therefore, the rennet was inserted for coagulation.

The milk of such cows gives the cheese its characteristic flavors.
